Founder of the ‘Better Fish Project’ initiative, Richard Webb is a passionate sustainable seafood advocate and ex-chef/owner of South Brisbane fish and chip shop, Swampdog. Operating on the motto “Good for you, Good for me, and Good for the sea”, prior to Swampdog, Richard owned popular Auchenflower restaurant Sprout for ten years – where, after spending a few days immersed in the environmentally conscious Woodford Folk Festival, he realised that he needed to get back to his local, sustainable fish.
