The latest breed of chef has arrived at e’cco in the form of our new head chef, Simon Palmer.
Simon trained under Tim Montgomery at the highly regarded Bacchus restaurant, in Newcastle, New South Wales. He then worked for two years under Alejandro Cancino at Urbane and most recently worked under the renowned Ben Williamson of Gerard’s Bistro.
He joins e’cco in his first, but highly anticipated head chef role and will be leading the kitchen into a new era, providing for a fresh and thrilling experience for diners.
